16 ingredients

12 steps

What you need

  • 800 g (1 3/4 lb) bone-in chicken thighs, skin removed, cut into pieces
  • 150 g (2/3 cup) plain whole-milk yogurt, whisked
  • 1 tbsp ginger garlic paste
  • 1 tsp Kashmiri red chili powder
  • 1 tsp salt, plus more to taste
  • 50 g (1/3 cup) cashews
  • 4 tbsp ghee
  • 2 large onions, thinly sliced
  • 5 green cardamom pods
  • 4 cloves
  • 1 piece cinnamon stick, about 5 cm (2 in)
  • 2 bay leaves
  • 1 tsp ground coriander
  • 250 ml (1 cup) water
  • 1/2 tsp garam masala
  • 1 tbsp fresh cilantro, chopped

Method

Restated from the original video

  1. 1

Mix the chicken with the yogurt, ginger garlic paste, chili powder and salt. Cover and refrigerate for at least 30 min.

  2. 2

Soak the cashews in hot water for 20 min.

  3. 3

Heat the ghee in a heavy pan over medium heat and fry the onions, stirring often, until deep golden brown, 12-15 min.

  4. 4

Lift the onions out with a slotted spoon, leaving the ghee in the pan.

  5. 5

Drain the cashews and blend them with the fried onions and a few tablespoons of the water into a smooth paste.

  6. 6

Reheat the ghee and add the cardamom, cloves, cinnamon and bay leaves. Fry until fragrant, about 30 seconds.

  7. 7

Add the chicken with all of its marinade and cook over medium heat, turning the pieces, until the yogurt has reduced and the chicken is lightly colored, 8-10 min.

  8. 8

Stir in the coriander and the onion and cashew paste and fry, stirring, until the ghee begins to separate, 3-4 min.

  9. 9

Pour in the rest of the water, bring to a simmer, cover and cook over low heat until the chicken is tender and reads 74 °C (165 °F) near the bone, 20-25 min. Stir now and then so the sauce does not catch.

  10. 10

Uncover and simmer until the sauce is thick and creamy, 2-3 min. Add a splash of water if it gets too thick.

  11. 11

Sprinkle over the garam masala, taste for salt, then cover off the heat and rest for 5 min.

  12. 12

Garnish with the cilantro and serve with naan or rice.
