Method
Restated from the original video
- 1
Peel the cucumbers if the skin is thick or bitter. If the seeds are large, halve the cucumbers lengthwise and scrape them out.
- 2
Slice the cucumbers as thin as you can, about 2 mm (1/16 in).
- 3
Toss the slices with 1/2 tsp of the salt in a colander and leave for 20 min.
- 4
Squeeze the slices gently in a clean towel to remove the liquid.
- 5
Stir the sour cream with the lemon juice, sugar, the remaining 1/2 tsp salt and the pepper in a bowl.
- 6
Fold in the cucumbers, dill and spring onion.
- 7
Taste and adjust the salt and lemon juice. Serve at once, or chill for up to 30 min.
