- 3 tbsp potato starch
- 1 egg
- 300 g (10 oz) ground pork
- 2 onions, medium; 1 finely chopped for the filling, 1 sliced for the topping
- 1 tbsp vegetable oil
- 1 tsp dried marjoram
- 1/2 tsp black pepper

- 150 g (2/3 cup) sour cream, to serve
- salt, for the dough, the filling and the cooking water
Method
Restated from the original video
- 1
Peel the potatoes. Cut 300 g of them into chunks and simmer in salted water until completely soft, about 15 min.
- 2
Drain the chunks, mash them until smooth and leave to cool.
- 3
Heat the oil in a frying pan over medium heat. Fry the chopped onion until soft and golden, 6-8 min.
- 4
Add the pork, marjoram, pepper and 1/2 tsp salt. Fry, breaking up the meat, until cooked through with no pink left, 8-10 min. Let the filling cool.
- 5
Finely grate the remaining 500 g potatoes. Wrap them in a clean cloth and squeeze out as much liquid as you can into a bowl.
- 6
Let the squeezed liquid settle for 2 min, pour off the clear water and scrape the white starch from the bottom back into the grated potatoes.
- 7
Mix the grated potatoes, mashed potatoes, egg, potato starch and 1 tsp salt into a soft dough that holds together. If it sticks to your hands, work in a little more starch.
- 8
Dice the bacon and fry it in a dry pan over medium heat until crisp, 6-8 min. Add the sliced onion and fry until golden, 5 min. Keep warm.
- 9
Bring a large pot of salted water to a gentle simmer.
- 10
Divide the dough into 12 pieces. With wet hands, flatten one piece into a disc, set a heaped tablespoon of filling in the middle and close the dough around it. Roll into a smooth ball or a slightly flattened oval.
- 11
Lower the dumplings into the water a few at a time, so the water never stops simmering. Once they rise to the surface, cook for 10 min.
- 12
Lift them out with a slotted spoon and drain briefly. Serve topped with the bacon and onion, with sour cream on the side.
