What you need

  • 250 g (2 cups) all-purpose flour
  • 50 g (1/4 cup) granulated sugar, for the batter, plus 2 tbsp for sprinkling
  • 1/4 tsp fine salt
  • 1/2 tsp instant yeast, or 3/4 tsp active dry yeast, stirred into the water first
  • 300 ml (1 1/4 cups) lukewarm water
  • 2 large eggs
  • 1/4 tsp vanilla extract
  • 25 g (2 tbsp) unsalted butter, melted and cooled
  • 1/2 tsp baking soda
  • 60 g (2 oz) dark chocolate, coarsely chopped
  • 60 g (1/2 cup) roasted peanuts, coarsely chopped
  • 50 g (1/2 cup) cheddar, grated
  • 4 tbsp sweetened condensed milk
  • 40 g (3 tbsp) salted butter, softened, for spreading

Method

Restated from the original video

  1. 1

Whisk the flour, 50 g of the sugar, salt and yeast in a large bowl.

  2. 2

Pour in the water gradually, whisking until the batter is smooth and has no lumps.

  3. 3

Beat in the eggs, vanilla and melted butter.

  4. 4

Cover and leave in a warm place until the surface is bubbly, 45 min.

  5. 5

Heat a 22-24 cm (9 in) nonstick frying pan with a lid over medium heat. Do not grease it. Drop in a few grains of sugar: they should melt on contact.

  6. 6

Dissolve the baking soda in 1 tbsp of water and stir half of it into the batter right before cooking. Keep the rest for the second martabak.

  7. 7

Pour in half of the batter and swirl to cover the pan. Cook on medium heat until the whole surface is covered in small holes, 4-6 min.

  8. 8

Sprinkle 1 tbsp of sugar over the surface, cover and cook on the lowest heat until the middle is set and the top looks dry, 4-5 min.

  9. 9

Slide the martabak onto a board. While it is hot, spread with a quarter of the salted butter, then scatter with half of the chocolate, peanuts and cheddar.

  10. 10

Drizzle with 2 tbsp of the condensed milk and fold in half. Brush the top with a little more salted butter.

  11. 11

Cut into 4 pieces and serve at once. Repeat with the remaining batter and toppings for the second martabak, stirring in the rest of the baking soda first.
