Whisked Hot Matcha Latte with Steamed Milk
4 ingredients
8 steps
What you need
- 1 tsp matcha powder, about 2 g
- 60 ml (1/4 cup) water
- 240 ml (1 cup) whole milk
- 1 tsp honey, or to taste, optional
Method
Restated from the original video
- 1
Heat the water until steaming but well short of a boil, about 80 °C (175 °F). Boiling water turns matcha bitter.
- 2
Sift the matcha through a small sieve into a wide mug or bowl to break up any lumps.
- 3
Pour a splash of the hot water over the powder and stir into a smooth paste.
- 4
Add the rest of the water and whisk briskly in a zigzag, side to side rather than in circles, until the surface is covered in fine foam and no powder is left, 20-30 seconds.
- 5
Warm the milk in a small pan over medium heat until it steams and tiny bubbles form at the edge, about 65 °C (150 °F). Do not let it boil.
- 6
Stir the honey into the hot milk until dissolved.
- 7
Froth the milk with a handheld frother or by whisking hard in the pan until it doubles in volume and turns silky, about 30 seconds.
- 8
Hold back the foam with a spoon while the hot milk goes in on top of the whisked tea, then spoon the foam over. Serve straight away.
About matcha latte
Whisked matcha powder mixed with steamed milk and a little honey, more milk-forward than a straight bowl of tea. Grassy and slightly bitter under the sweetness, with a green color that comes from the powder alone.
