Matcha Latte

Whisked matcha powder mixed with steamed milk and a little honey, more milk-forward than a straight bowl of tea. Grassy and slightly bitter under the sweetness, with a green color that comes from the powder alone.

Where it comes from

Matcha developed inside Japanese tea ceremony from powdered green tea introduced from China centuries ago. The latte version is a modern cafe invention, pairing the powder with steamed milk in the style of an espresso drink rather than any traditional tea preparation.

What cooks argue about

The fight is over whisking: a bamboo chasen in a zigzag motion breaks up clumps and builds foam, while a spoon or blender leaves gritty powder floating in the milk.
