Where it comes from

It spread as a summer alternative to hot coffee, and using espresso instead of brewed coffee let cafes chill and dilute a drink fast without losing all its flavor.

What cooks argue about

The fight is over pouring hot espresso straight over ice, which cools it fast but can taste sharp, or chilling the espresso first, which keeps flavor intact but takes longer.
