Where it comes from

Steeping tea double strength became standard because ice dilutes the brew, and hot southern summers made a cold version more practical than serving it hot year-round.

Cooks argue over dissolving sugar into the tea while it is still hot, which is what makes sweet tea sweet, or adding it after cooling, which turns grainy unless using a syrup.
