Gin and Tonic
Gin poured over ice and topped with tonic water, finished with a wedge of lime, a bitter, effervescent drink meant to be sipped slowly.
Where it comes from
British colonial officers in quinine-growing regions drank tonic water against malaria and added gin to make the bitter dose palatable, a drink that started as medicine rather than a craving.
What cooks argue about
Cooks argue over the ratio: a strong pour close to equal parts gin and tonic, or a lighter pour heavy on tonic that goes down easier over a long session.
