Where it comes from

Bubble tea began in Taiwan in the 1980s, when tea shop owners started adding tapioca pearls to cold milk tea; several Taichung shops claim to have invented it first, and no single origin is settled.

What cooks argue about

Cooks argue over cooking the tapioca pearls long enough to lose their chalky center without turning mushy, and over how long pearls can sit in syrup before they lose their chew.
