Lassi
Yogurt blended with water or milk into a thick, drinkable consistency, sweetened with sugar or salted with cumin. Served cold, sometimes topped with a spoon of cream.
Where it comes from
The drink comes from Punjab, where yogurt was a way to use surplus milk and cool down during hot months. Sweet and salted versions split along regional and personal lines rather than one being more traditional than the other.
What cooks argue about
The clearest split is sweet versus salted lassi, a regional divide rather than a technical error. Cooks also argue over how much water to add before the drink thins too far.
