Doughnut
An enriched, yeasted dough is proofed, cut into rings or filled shapes, deep-fried until golden, and finished with glaze or powdered sugar.
Where it comes from
Fried dough has roots across many cultures, but the ring shape is often traced to Dutch settlers' olykoek brought to America, later punched with a hole to cook more evenly through the center.
What cooks argue about
The core fight is proof time: underproofed dough fries dense, overproofed dough collapses in the hot oil, so timing the second rise matters more than any other single step.
