5 ingredients
7 steps
What you need
- 500 g (1 lb) beets, 3 medium, scrubbed, left unpeeled
- 80 g (3/4 cup) walnuts
- 2 cloves garlic, pressed or finely grated
- 3 tbsp mayonnaise, plus more if needed
- salt, to taste, plus some for the cooking water
Method
Restated from the original video
- 1
Put the beets in a pot, cover with salted water and boil until a knife slides in easily, 45-60 min.
- 2
Drain and let the beets cool completely, about 30 min. Cooking them the evening before works well.
- 3
Toast the walnuts in a dry frying pan over medium heat for 3-4 min, until fragrant. Cool, then chop into small pieces.
- 4
Peel the beets and grate them on the coarse side of a grater into a bowl.
- 5
Add the garlic, walnuts, mayonnaise and a little salt, then mix well.
- 6
Taste. Add more garlic for a sharper bite, or another spoonful of mayonnaise if the beets have soaked it up.
- 7
Chill for 30 min, then serve cold.
