10 steps
What you need
- 500 g (1 lb) ground beef, about 20% fat
- 1 small onion, grated
- 1 clove garlic, finely chopped
- 1 tsp dried oregano
- 2 tbsp flat-leaf parsley, finely chopped
- 1 egg
- 30 g (1/4 cup) dried breadcrumbs

- 1 tsp salt
- 1/2 tsp black pepper
- 120 g (4 oz) feta, cut into 4 flat slabs
- 1 lemon, cut into wedges
Method
Restated from the original video
- 1
Put the beef, onion with its juice, garlic, oregano, parsley, egg, breadcrumbs, olive oil, salt and pepper in a large bowl.
- 2
Knead with your hands until evenly mixed and slightly sticky, 2-3 min.
- 3
Divide the mixture into 4 portions.
- 4
Flatten one portion into an oval about 1 cm (1/2 in) thick in your palm.
- 5
Lay a slab of feta on one half, fold the meat over and pinch the edges firmly so no cheese shows.
- 6
Repeat with the rest and chill the patties for 10 min if they feel soft.
- 7
Heat a griddle pan or barbecue to medium-high and brush the grates or pan with a little oil.
- 8
Cook the patties until well browned underneath, 5-6 min, then turn and cook the other side for 5-6 min.
- 9
Check that they are cooked through: the centre of the meat should reach 71 °C (160 °F).
- 10
Rest for 2 min and serve with the lemon wedges for squeezing.
