What you need
- 900 g (2 lb) beef sirloin, cut into 4 cm (1 1/2 in) cubes
- 2 red bell peppers, cut into 4 cm (1 1/2 in) pieces
- 1 red onion, large, cut into 4 cm (1 1/2 in) pieces
- 150 ml (2/3 cup) olive oil
- 80 ml (1/3 cup) lemon juice, from about 2 lemons

- 3 tbsp fresh dill, chopped; 1 tbsp dried works
- 2 dried bay leaves
- 1 tsp salt
- 1 tsp black pepper, freshly ground
- 12 wooden skewers
Method
Restated from the original video
- 1
Whisk the olive oil, lemon juice, garlic, dill, bay leaves, salt and pepper in a large non-metal bowl.
- 2
Add the beef and stir until every cube is coated. Cover and refrigerate for 4 hours, stirring a few times.
- 3
Soak the skewers in water for 30 min so they do not burn.
- 4
Take the beef out of the fridge 30 min before grilling. Cut the peppers and onion into pieces about the same size as the beef and separate the onion layers.
- 5
Thread beef, pepper and onion onto the skewers, alternating them, and leave a little space between pieces. Discard the leftover marinade.
- 6
Heat a grill to medium-high. Grill the skewers for 8-10 min, turning every 2-3 min, until browned outside and pink in the middle for medium.
- 7
Rest the skewers for 5 min so the juices settle, then serve.
