Crunchy Fried Nutmeg Dough Bites
9 ingredients
11 steps
What you need
- 500 g (4 cups) all-purpose flour, plus extra for dusting
- 100 g (1/2 cup) granulated sugar
- 1 tsp ground nutmeg, freshly grated if possible
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 120 ml (1/2 cup) milk
- 55 g (4 tbsp) butter, melted and cooled
- 1 l (1 quart) vegetable oil, for frying
Method
Restated from the original video
- 1
Whisk the flour, sugar, nutmeg, baking powder and salt together in a large bowl.
- 2
In another bowl, beat the eggs with the milk and the butter.
- 3
Pour the wet mixture into the dry one and work it with your hands into a firm, smooth dough, 3-4 min. A dent pressed in with a finger should slowly spring back. If it feels sticky, knead in a little more flour.
- 4
Cover the dough and let it rest for 10 min.
- 5
Dust the work surface with flour and roll the dough out to about 1 cm (1/2 in) thick.
- 6
Cut it into strips 1 cm wide with a knife or pizza wheel, then cut across into small cubes.
- 7
Toss the cubes with a little flour so they do not stick together.
- 8
Heat the oil in a deep pan to 170 °C (340 °F).
- 9
Fry the cubes in batches, stirring often so they colour evenly, until deep golden brown, 5-7 min per batch. They are still soft in the oil and crisp up as they cool.
- 10
Lift them out with a slotted spoon onto paper towels.
- 11
Let them cool completely, about 20 min, before serving. Store in an airtight container.
