What you need

  • 150 g (5 oz) ground pork
  • 6 eggs
  • 100 g (3 1/2 oz) bean sprouts, roughly chopped
  • 1/2 onion, thinly sliced
  • 3 spring onions, cut into 3 cm (1 1/4 in) lengths
  • 2 dried shiitake mushrooms, soaked 20 min, squeezed and sliced; optional
  • 1 tsp light soy sauce, for the eggs
  • 1/2 tsp salt
  • 1/4 tsp white pepper, plus a pinch for the gravy
  • 1/4 tsp sesame oil
  • 1/4 tsp cornstarch, for the eggs
  • 5 tbsp vegetable oil, for frying
  • 250 ml (1 cup) chicken stock
  • 1 tbsp light soy sauce, for the gravy
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 tbsp cornstarch, for the gravy, mixed with 2 tbsp cold water

Method

Restated from the original video

  1. 1

Heat 1 tbsp of the oil in a wok over high heat. Stir-fry the pork, breaking it up, until cooked through with no pink left, 3-4 min. Tip onto a plate and let it cool.

  2. 2

In a large bowl, whisk the eggs with the 1 tsp soy sauce, salt, white pepper, sesame oil and 1/4 tsp cornstarch.

  3. 3

Stir the cooled pork, bean sprouts, onion, spring onions and shiitake into the eggs.

  4. 4

Wipe the wok and heat 2 tbsp of the oil over medium-high heat until it shimmers.

  5. 5

Ladle in about a quarter of the egg mixture. The edges should sizzle and bubble straight away.

  6. 6

Fry without stirring until the underside is golden and the top is mostly set, 2-3 min.

  7. 7

Flip and fry the other side until golden and the egg is set all the way through, 1-2 min. Keep warm on a plate.

  8. 8

Repeat with the rest of the mixture, adding more oil as needed, to make 4 patties.

  9. 9

For the gravy, bring the stock, 1 tbsp soy sauce, oyster sauce, sugar and a pinch of white pepper to a simmer in a small pan.

  10. 10

Stir the cornstarch slurry, pour it in and stir until the gravy turns glossy and thickens, about 1 min.

  11. 11

Stack the patties on plates, pour the gravy over and serve with steamed rice.
