10 ingredients
9 steps
What you need
- 6 green plantains, about 1 kg (2 lb), East African matoke bananas if available
- 1 lemon, juiced
- 3 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, chopped
- 1 green chili, chopped, optional
- 3 tomatoes, about 400 g (14 oz), peeled and chopped
- 500 ml (2 cups) water
- 1 tsp salt, to taste
- black pepper, freshly ground, to taste
Method
Restated from the original video
- 1
Cut the ends off each plantain and slit the peel along its ridges. Pry the peel off with the tip of a knife.
- 2
Cut the plantains into thick chunks about 3 cm (1 in) long. Squeeze the lemon over them and toss so they do not darken.
- 3
Heat the oil in a large heavy pot over medium heat. Cook the onion until soft, 4-5 min.
- 4
Add the garlic and green chili. Cook for 1 min.
- 5
Add the tomatoes and cook, stirring now and then, until they break down into a thick sauce, 8-10 min.
- 6
Pour in the water and add the salt. Bring to a gentle simmer.
- 7
Add the plantains and cover the pot. Cook over low heat, turning the chunks once, until a knife slides in with no resistance, 35-40 min. Add a splash of water if the pot looks dry.
- 8
Mash the plantains right in the pot, working in the sauce, until the texture is thick and slightly chunky.
- 9
Season with pepper, taste for salt and serve hot.
