Method

Restated from the original video

  1. 1

Spread the pork, beef and bacon cubes on a tray and freeze for 30 min, until stiff at the edges but not solid.

  2. 2

Grind the meat and bacon twice through the finest plate of a grinder. Without a grinder, pulse small batches in a food processor until finely minced.

  3. 3

Put the ground meat in a food processor with the salt, white pepper, marjoram, allspice and nutmeg.

  4. 4

Run the processor, adding the ice in a few portions, until the mixture turns into a smooth, pale, sticky paste, 2-3 min. If it feels warm, chill it for 15 min.

  5. 5

Add the onion and pulse a few times until finely mixed in.

  6. 6

    Heat the oven to 180 °C (350 °F). Brush a 2 l (8 cup) loaf pan with the oil.

  7. 7

Pack the paste into the pan, pressing out air pockets, and smooth the top. Cut shallow diagonal lines across the surface in a grid.

  8. 8

Bake for 60-70 min, until the top is deep brown and the center reaches 71 °C (160 °F).

  9. 9

Rest in the pan for 15 min, then turn out and cut into slices about 2 cm (3/4 in) thick.

  10. 10

Serve warm in halved bread rolls with sweet mustard. Leftover slices are good fried in a pan for 2-3 min per side until browned.
