Hot Irish Coffee with a Floating Cream Layer

4 ingredients

7 steps

What you need

  • 150 ml (5 fl oz) strong brewed coffee, freshly made and hot
  • 2 tsp brown sugar
  • 40 ml (1 1/2 fl oz) Irish whiskey
  • 30 ml (1 fl oz) heavy cream, well chilled

Method

Restated from the original video

  1. 1

Fill a heatproof stemmed glass or mug with very hot water and leave it for 2-3 min to warm through.

  2. 2

Whisk the cream by hand until it thickens slightly but still pours, about 30-45 seconds. It should not hold peaks.

  3. 3

Tip the water out of the glass.

  4. 4

Add the sugar and pour in the hot coffee, leaving about 2 cm of space at the top. Stir until the sugar has fully dissolved.

  5. 5

    Stir in the whiskey.

  6. 6

Hold a spoon upside down just above the surface of the drink and pour the cream slowly over its back, so it settles in a layer on top.

  7. 7

Serve straight away without stirring, and drink the hot coffee through the cold cream.

About irish coffee

Hot coffee mixed with sugar and Irish whiskey, topped with a layer of lightly whipped cream that floats instead of mixing in.

What cooks argue about

The cream is poured over the back of a spoon so it floats as a distinct layer meant to be sipped through, not stirred in; whipped too loose it sinks, too stiff it clumps.
