What you need
- 1 large cauliflower, about 1 kg (2 1/4 lb)
- 95 g (3/4 cup) all-purpose flour
- 240 ml (1 cup) water
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1 tbsp vegetable oil

- 120 ml (1/2 cup) cayenne pepper hot sauce
- 4 stalks celery, cut into sticks
- 120 ml (1/2 cup) blue cheese dressing, to serve
Method
Restated from the original video
- 1
Heat the oven to 220 °C (425 °F). Line a large baking tray with baking paper and brush it with half the oil.
- 2
Cut the cauliflower into bite-sized florets.
- 3
Whisk the flour, water, garlic powder, onion powder, paprika and salt into a smooth batter about as thick as pancake batter.
- 4
Toss the florets in the batter. Lift them out one at a time and let the excess drip back into the bowl.
- 5
Spread the florets on the tray so they do not touch, then brush or drizzle them with the remaining oil.
- 6
Bake for 20 min, turn each piece over and bake until golden and firm, 10-15 min more.
- 7
Meanwhile, melt the butter in a small pan over low heat, whisk in the hot sauce and take it off the heat.
- 8
Tip the baked cauliflower into a large bowl, pour over the sauce and toss until every piece is coated.
- 9
Spread the florets back on the tray and bake until the sauce sets and the edges darken, 8-10 min.
- 10
Serve hot with the celery sticks and blue cheese dressing for dipping.
