10 steps
What you need
- 600 ml (2 1/2 cups) vegetable oil, for frying
- 140 g (1 cup plus 2 tbsp) all-purpose flour
- 1 1/2 tsp baking powder
- 1 tbsp granulated sugar
- 1/4 tsp salt
- 1 large egg
- 180 ml (3/4 cup) whole milk
- 1 tsp vanilla extract
- 30 g (1/4 cup) powdered sugar, for dusting
Method
Restated from the original video
- 1
Pour the oil into a wide, heavy pot so it is about 4 cm (1 1/2 in) deep. Heat to 175 °C (350 °F).
- 2
Line a large plate with paper towels.
- 3
Whisk the flour, baking powder, sugar and salt in a bowl.
- 4
In a jug, beat the egg with the milk and vanilla.
- 5
Pour the milk mixture into the flour and whisk until smooth. The batter should be pourable, thicker than cream.
- 6
Pour the batter into a funnel while holding a finger over the spout, or into a squeeze bottle.
- 7
Release the batter just above the oil in a loose spiral, crossing over itself to make a lattice about 12 cm (5 in) wide.
- 8
Fry until the underside is golden, 1-2 min. Flip with tongs or a slotted spatula and fry the second side the same way.
- 9
Lift out the cake, drain it on the paper towels and repeat with the remaining batter, letting the oil come back to temperature between cakes.
- 10
Dust generously with powdered sugar and serve warm.
