Gratinéed French Onion Soup with Gruyère Toasts

11 ingredients

12 steps

What you need

  • 1.5 kg (3 1/4 lb) yellow onions, about 6 large
  • 50 g (3 1/2 tbsp) unsalted butter
  • 2 tbsp plain flour
  • 150 ml (2/3 cup) dry white wine
  • 1.5 l (6 1/4 cups) beef stock
  • 3 sprigs thyme
  • 1 bay leaf
  • 8 slices baguette, cut about 2 cm (3/4 in) thick
  • 200 g (7 oz) gruyère, coarsely grated
  • salt, to taste
  • black pepper, freshly ground, to taste

Method

Restated from the original video

  1. 1

Halve the onions from root to tip, peel them and slice them thin, following the grain.

  2. 2

Melt the butter in a large heavy pot over medium heat. Add the onions with a pinch of salt and turn them to coat.

  3. 3

Cook, stirring every few minutes, until the onions collapse and turn soft and pale gold, about 15 min.

  4. 4

Keep cooking, stirring more often as the color deepens, until they are deeply browned and jammy, 30-40 min more. Scrape the base of the pot each time so nothing scorches.

  5. 5

Sprinkle in the flour and stir for 1 min.

  6. 6

Pour in the wine and scrape loose the brown film stuck to the pot. Let it bubble until nearly gone, 2-3 min.

  7. 7

Add the stock, thyme and bay leaf. Bring to a boil, then turn the heat down and simmer with the lid ajar for 30 min.

  8. 8

While the soup simmers, heat the oven to 200 °C (400 °F). Spread the baguette slices on a baking tray and toast until dry and golden at the edges, 6-8 min.

  9. 9

Lift out the thyme stalks and the bay leaf. Season the soup with salt and pepper.

  10. 10

Switch the oven to its grill (broiler) setting. Stand 4 ovenproof bowls on a baking tray and ladle the soup into them.

  11. 11

Float 2 toasts on each bowl and pile the gruyère thickly over them, right to the rim.

  12. 12

Grill about 15 cm (6 in) below the heat until the cheese melts and blisters with brown patches, 2-4 min. Serve straight away; the bowls will be very hot.

About french onion soup

Onions cooked slowly until deep brown and sweet, simmered in beef stock, then topped with a toasted baguette slice and melted gruyere browned under a broiler.

What cooks argue about

Cooks argue over how long to caramelize the onions: some cook them for over an hour until deeply browned and jammy, while others rush it with added sugar or baking soda.
