10 ingredients
10 steps
What you need
- 4 salmon fillets, skin on, about 170 g (6 oz) each
- 3 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp olive oil
- 2 clove garlic, finely grated
- 1 tsp lemon zest, finely grated
- 1 tbsp lemon juice
- 1/2 tsp black pepper, freshly ground
- 1 tbsp vegetable oil, for the grates
- 1 lemon, cut into wedges, for serving
Method
Restated from the original video
- 1
Whisk the soy sauce, honey, olive oil, garlic, zest, lemon juice and black pepper in a bowl.
- 2
Spoon 2 tbsp of this mixture into a small dish and set it aside for glazing. It must not touch raw fish.
- 3
Put the salmon in a shallow dish, pour over the rest of the marinade and turn the fillets to coat.
- 4
Cover and refrigerate for 30 min. Much past an hour and the soy starts to cure the flesh.
- 5
Heat the grill to medium-high, scrub the grates clean and wipe them with vegetable oil on a folded paper towel.
- 6
Lift the salmon out, let the excess drip off and wipe away any bits of garlic that could scorch.
- 7
Lay the fillets skin side down and grill without moving until the skin is crisp and releases easily, 4-5 min.
- 8
Turn the fillets carefully and grill until the flesh is opaque and flakes at the thickest point, 2-4 min more.
- 9
Brush the tops with the reserved glaze and take them off the heat.
- 10
Serve with the lemon wedges.
