- 150 g (3/4 cup) granulated sugar
- 1 large egg, beaten

- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 190 g (1 1/2 cups) all-purpose flour
Method
Restated from the original video
- 1
Heat the oven to 175 °C (350 °F). Butter a 23 x 13 cm (9 x 5 in) loaf pan and line the base with baking paper.
- 2
Mash the bananas in a large bowl with a fork until mostly smooth.
- 3
Stir in the melted butter, then the sugar, egg and vanilla extract.
- 4
Sprinkle the baking soda, cinnamon and salt over the mixture and stir well.
- 5
Add the flour and fold just until no dry streaks remain. Do not overmix.
- 6
Scrape the batter into the pan and level the top.
- 7
Bake until well risen and a skewer in the centre comes out clean or with a few moist crumbs, 55-65 min. Cover loosely with foil if the top browns too fast.
- 8
Leave the loaf in its pan for 10 min. Lift it onto a wire rack and let it cool before slicing.
