What you need
- 225 g (2 sticks) unsalted butter, softened, plus extra for the pan
- 225 g (1 cup plus 2 tbsp) granulated sugar

- 2 tsp vanilla extract
- 225 g (1 3/4 cups) all-purpose flour
- 1/4 tsp salt
Method
Restated from the original video
- 1
Heat the oven to 175 °C (350 °F). Grease a 23 x 13 cm (9 x 5 in) loaf pan and line the bottom and long sides with a strip of parchment.
- 2
Using a mixer on medium-high speed, beat the butter with the sugar until pale and airy, 4-5 min.
- 3
Crack in the eggs one by one, beating 30 seconds after each. If the mixture looks curdled, beat in a spoonful of the flour.
- 4
Beat in the vanilla.
- 5
Whisk the flour and salt together.
- 6
Fold the flour into the batter in two additions with a spatula, just until no streaks remain.
- 7
Scrape the batter into the pan and smooth the top.
- 8
Bake until deep golden with a split down the middle and a skewer comes out clean, 55-65 min. If the top browns too fast after 40 min, cover it loosely with foil.
- 9
Cool in the pan for 15 min, then lift out onto a wire rack.
- 10
Cool completely, at least 30 min, before slicing.
