Spanish Red Wine Sangria with Citrus, Apple and Brandy

8 ingredients

8 steps

What you need

  • 2 oranges
  • 1 lemon
  • 1 apple, red-skinned
  • 3 tbsp sugar, plus more to taste
  • 80 ml (1/3 cup) brandy, Spanish if possible
  • 750 ml (1 bottle) dry Spanish red wine, such as a young Tempranillo or Garnacha
  • 250 ml (1 cup) lemon soda or sparkling water, chilled, optional
  • ice, for serving

Method

Restated from the original video

  1. 1

Cut one orange and the lemon into thin half-moons, leaving the peel on. Core the apple and cut it into small chunks with the skin on.

  2. 2

Put the orange and lemon slices, the apple and the sugar in a large jug. Press and stir with a wooden spoon for 30-45 seconds to bruise the pieces and draw out some juice.

  3. 3

Squeeze the juice of the second orange into the jug, add the brandy and stir until the sugar has dissolved.

  4. 4

Pour in the wine and stir well.

  5. 5

Chill in the fridge for at least 1 hour so the wine picks up the citrus and apple. It can sit a few hours longer.

  6. 6

Taste and add a little more sugar or brandy if needed.

  7. 7

Just before serving, top up with the soda and stir once.

  8. 8

Fill glasses with ice and pour over the sangria, spooning some orange, lemon and apple into each glass.

About sangria

Red wine mixed with chopped fruit, a splash of brandy, and a little sugar, left to sit so the fruit soaks up the wine before serving over ice.

What cooks argue about

The variable that changes the result most is maceration time: a quick mix served within the hour tastes mostly of wine, while fruit left to soak overnight pulls in more sweetness and fruit flavor.
