- 1 lemon, peel only, in wide strips without the white pith
- 1 cinnamon stick, small
- 1 tbsp dark rum
- 1 tbsp orange blossom water
- 500 g (4 cups) bread flour
- 7 g (2 1/4 tsp) instant yeast
- 100 g (1/2 cup) granulated sugar
- 1/2 tsp salt
- 2 large eggs, for the dough
- 90 g (6 tbsp) unsalted butter, soft, in pieces
- 1 dried fava bean, or a small ceramic figure; tell everyone it is hidden
- 1 egg, for the glaze
- 1 tbsp whole milk, for the glaze

Method
Restated from the original video
- 1
Heat the milk with the orange peel, lemon peel and cinnamon stick until it just starts to steam. Cover and steep for 10 min.
- 2
Strain the milk and let it cool to lukewarm. Stir in the rum and orange blossom water.
- 3
In a large bowl or the bowl of a stand mixer, mix the flour, yeast, sugar and salt.
- 4
Add the eggs and the lukewarm milk. Mix until the dough comes together, about 2 min.
- 5
Add the butter a few pieces at a time. Knead until the dough is smooth, elastic and still slightly sticky, about 10 min with a dough hook or 15 min by hand.
- 6
Shape the dough into a ball, cover and leave in a warm spot away from drafts until doubled, 1 1/2-2 hours.
- 7
Punch down the dough and shape it into a ball. Press a hole through the center and stretch it into a ring about 30 cm (12 in) across, with a hole about 10 cm (4 in) wide.
- 8
Lift the ring onto a parchment-lined baking sheet. Push the bean into the dough from underneath so it does not show.
- 9
Cover and leave until puffy, about 1 hour. Heat the oven to 180 °C (350 °F) toward the end.
- 10
Beat the egg with the 1 tbsp milk and brush the ring all over.
- 11
Press the candied fruit into the top, then scatter on the almonds and coarse sugar.
- 12
Bake until deep golden, 25-30 min. Tent loosely with foil if the top browns too fast.
- 13
Cool completely on a rack. Serve in slices, and warn guests about the bean inside.
