- 1 onion, diced

Method
Restated from the original video
- 1
Boil the potatoes in salted water until just tender, 20-25 min. Drain, let them cool, then peel and cut into 1 cm (1/2 in) slices. Potatoes boiled a day ahead fry up crisper.
- 2
Heat the oil in a large nonstick frying pan over medium heat and cook the bacon until the fat runs and the edges brown, 4-5 min.
- 3
Add the onion and cook until soft and golden, 3-4 min.
- 4
Add the potato slices in one layer. Fry without stirring too often until crisp and golden underneath, 8-10 min, turning in sections.
- 5
Season with salt, pepper and nutmeg.
- 6
Beat the eggs with a pinch of salt and pour them evenly over the potatoes.
- 7
Cover and cook over low heat until the eggs are fully set, 4-5 min.
- 8
Scatter with parsley and bring the pan to the table.
