13 ingredients

14 steps

What you need

  • 250 ml (1 cup) whole milk, lukewarm
  • 7 g (2 1/4 tsp) active dry yeast
  • 75 g (1/3 cup) granulated sugar
  • 500 g (4 cups) all-purpose flour, plus extra for dusting
  • 1/2 tsp salt
  • 1 lemon, zest only
  • 1 large egg
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 60 g (4 tbsp) unsalted butter, soft
  • 1.5 l (6 cups) sunflower oil, for deep frying
  • 200 g (2/3 cup) raspberry jam, smooth, or pressed through a sieve
  • 50 g (1/2 cup) powdered sugar, for dusting

Method

Restated from the original video

  1. 1

Stir the yeast and 1 tsp of the sugar into the lukewarm milk. Leave for 5 min until foamy.

  2. 2

In a stand mixer bowl, combine the flour, remaining sugar, salt and lemon zest.

  3. 3

Add the egg, yolks, vanilla and the yeast milk. Knead with the dough hook for 5 min.

  4. 4

Add the butter in small pieces and knead 8-10 min more, until the dough is smooth, elastic and pulls away from the bowl.

  5. 5

Cover and leave in a warm place until doubled, about 1 hour.

  6. 6

Turn the dough out onto a lightly floured surface. Divide into 12 pieces of about 80 g and roll each into a smooth ball.

  7. 7

Set the balls well apart on a floured tray, cover with a towel and rest until puffy, about 30 min.

  8. 8

Heat the sunflower oil in a pot about 20 cm (8 in) wide to 170 °C (340 °F). It should be at least 4 cm (1 1/2 in) deep so the doughnuts float.

  9. 9

Lower 3-4 balls into the oil. Cover with a lid and fry for 2-3 min, until the underside is golden.

  10. 10

Turn them over, remove the lid and fry another 2-3 min. A pale band should show around the middle.

  11. 11

Lift out onto paper towels. Fry the rest in batches, letting the oil return to 170 °C (340 °F) between them.

  12. 12

Let the doughnuts cool for 10 min. Spoon the jam into a piping bag with a narrow tip.

  13. 13

Push the tip into the side of each doughnut until it reaches the middle and squeeze in about 15 g of jam.

  14. 14

Dust with powdered sugar and serve the same day.
