  • 2 green bell peppers, cored and diced
  • 3 stalks celery, diced

Method

Restated from the original video

  1. 1

Stir the paprika, cayenne, oregano, thyme and black pepper together in a small bowl.

  2. 2

Toss the chicken with 1 tsp of the spice mix and 1 tsp salt.

  3. 3

Heat the oil in a large Dutch oven over medium-high heat. Brown the sausage, 3-4 min, then lift it out onto a plate.

  4. 4

Add the chicken to the same pot in one layer and sear until golden, 4-5 min. Move it to the plate with the sausage.

  5. 5

Add the onion, peppers and celery to the fat left in the pot. Cook, stirring often, until soft, 6-8 min.

  6. 6

Stir in the garlic and cook for 30 seconds.

  7. 7

Add the rice, the rest of the spice mix and the bay leaf. Stir for 1 min so the grains are coated.

  8. 8

Pour in the tomatoes and stock, add 1/2 tsp salt and scrape the browned bits off the bottom. Bring to a boil.

  9. 9

Return the chicken and sausage with their juices to the pot and stir once. Cover, turn the heat to low and cook without stirring until the rice is tender and the liquid is absorbed, 20-25 min. The chicken must reach 74 °C (165 °F) inside.

  10. 10

Lay the shrimp on top, cover and cook on low until they turn pink and opaque, 5-6 min.

  11. 11

Remove the bay leaf and fold everything together gently. Taste and add more salt or hot sauce.

  12. 12

Serve in bowls, topped with the green onions.
