Restated from the original video
- 1
Break the tamarind pulp into chunks in a heatproof bowl and cover with 500 ml hot water.
- 2
Leave it to soak until soft, about 20 min.
- 3
Mash the pulp with your fingers or a fork until it comes off the seeds and fibres.
- 4
Pour everything through a fine sieve into a jug. Press the pulp with the back of a spoon, then discard the seeds and fibres.
- 5
Add the sugar and stir until it dissolves.
- 6
Stir in 500 ml cold water. Taste and add more sugar if it is too sour; it should be sweet-tart.
- 7
Chill until cold, at least 30 min.
- 8
Bruise the mint leaves in your palm and drop them into the jug.
- 9
Pour over plenty of ice cubes and serve with a mint sprig in each glass.
