Method

Restated from the original video

  1. 1

Soak the cashews in hot water for 10 min, then drain.

  2. 2

Blend the cashews, coconut, tomato and chilies with about 120 ml (1/2 cup) water to a very smooth paste.

  3. 3

Heat the oil in a wide, heavy pan over medium heat. Add the cumin, cardamom, cloves, cinnamon and bay leaf and stir until fragrant, about 30 seconds.

  4. 4

Add the onion and cook, stirring often, until soft and light golden, 6-8 min.

  5. 5

Stir in the ginger and garlic and cook for 1 min.

  6. 6

Add the turmeric, coriander, chili powder and salt and stir for 30 seconds.

  7. 7

Add the potato, carrot, cauliflower and beans, toss to coat in the spices, then pour in 240 ml (1 cup) water.

  8. 8

Cover and simmer over low heat until the potato is almost tender, 10-12 min.

  9. 9

Stir in the cashew and coconut paste and the peas. Simmer gently, uncovered, until the sauce thickens and the vegetables are tender, 5-7 min. Add a splash of water if it gets too thick.

  10. 10

Stir in the garam masala and taste for salt.

  11. 11

Remove the bay leaf and cinnamon if you like, scatter with the cilantro and serve hot.
