11 steps

What you need

  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tbsp dried pomegranate seeds, anardana
  • 500 g (1 lb) beef mince, about 20% fat; lamb mince also works
  • 1 onion, finely chopped
  • 1 tomato, seeded and finely chopped
  • 3 green chillies, finely chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp red chilli flakes
  • 1/2 tsp garam masala
  • 1 tsp salt
  • 1 egg
  • 3 tbsp maize flour, or plain flour
  • 1 handful fresh coriander, chopped
  • 120 ml (1/2 cup) ghee, or beef tallow or neutral oil, for shallow-frying
  • 1 lemon, cut into wedges, to serve

Method

Restated from the original video

  1. 1

Toast the coriander seeds and cumin seeds in a dry pan over low heat until fragrant, 2-3 min.

  2. 2

Tip them into a mortar with the pomegranate seeds and pound to a coarse crumble.

  3. 3

Squeeze the chopped onion and tomato in a clean cloth to drain off excess juice. Wet patties fall apart in the pan.

  4. 4

Put the mince in a large bowl with the crushed spices, onion, tomato, green chillies, ginger paste, garlic paste, chilli flakes, garam masala and salt.

  5. 5

Crack in the egg, add the maize flour and fresh coriander, and knead with one hand for 2-3 min until the mixture turns sticky and holds together.

  6. 6

Chill the mixture for 15 min if it feels soft.

  7. 7

Wet your hands and divide the mixture into 8 balls. Press each one into a thin, wide patty about 1 cm (1/2 in) thick.

  8. 8

Heat the ghee in a wide, heavy frying pan over medium heat until it shimmers, about 175 °C (350 °F).

  9. 9

Fry the patties in batches, without moving them, until the underside is deep brown and crisp, 3-4 min.

  10. 10

Flip and fry the other side for 3-4 min, until the kebabs are cooked through with no pink inside, or 71 °C (160 °F) in the centre.

  11. 11

Drain on kitchen paper and serve hot with the lemon wedges.
