French Shallot and Dijon Vinaigrette

6 ingredients

6 steps

What you need

  • 1 small shallot, very finely chopped
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp fine salt
  • 90 ml (6 tbsp) extra virgin olive oil
  • black pepper, freshly ground, to taste

Method

Restated from the original video

  1. 1

Put the shallot in a small bowl with the vinegar and salt.

  2. 2

Leave it for 5 min so the shallot softens and loses its raw bite.

  3. 3

Whisk in the mustard until smooth.

  4. 4

Pour in the oil in a thin stream, whisking all the time, until the dressing thickens and turns cloudy and pale.

  5. 5

Grind in some pepper, taste on a leaf of salad and adjust with more salt or a few drops of vinegar.

  6. 6

Dress the salad just before serving. Whisk or shake again if it separates on standing.

About vinaigrette

A cold emulsified dressing of oil and vinegar, sharpened with mustard, which helps bind the two together, plus minced shallot for bite.

What cooks argue about

The variable that changes it most is ratio: classic French guidance runs about three parts oil to one part vinegar, though many cooks use closer to two to one for a sharper dressing.
