Restated from the original video
- 1
Put the ribs in a pot, cover with cold water and bring to a boil. Boil 3 min, until grey scum rises.
- 2
Drain the ribs and rinse them under running water. Rinse the pot too.
- 3
Return the ribs to the pot with 1.5 l of fresh water, the red dates and ginger. Bring to a boil.
- 4
Reduce to a gentle simmer, partly cover and cook 1 hour, until the meat is tender.
- 5
Add the watercress, pushing it under the liquid. Bring back to a boil, then simmer 20-30 min, until the watercress is very soft and the soup has darkened.
- 6
Add the goji berries and cook 5 min more.
- 7
Stir in the salt, taste and adjust. Serve hot with the ribs and dates in the bowls.
