What you need

  • 330 g (2 1/2 cups) all-purpose flour, plus extra for dusting
  • 2 tsp active dry yeast
  • 2 tsp sugar
  • 175 ml (3/4 cup) warm water, about 38 °C (100 °F)
  • 3/4 tsp salt, divided: 1/4 tsp for the dough, 1/2 tsp for the filling
  • 2 tbsp neutral oil
  • 2 tsp toasted sesame oil
  • 1/2 tsp black pepper, freshly ground
  • 3 stalks scallions, finely chopped

Method

Restated from the original video

  1. 1

Stir the yeast and sugar into the warm water and leave for 5 min, until foamy.

  2. 2

Combine 330 g of the flour with 1/4 tsp of the salt in a large bowl, add the yeast mixture and stir into a shaggy dough.

  3. 3

Knead on a lightly floured surface until smooth and elastic, about 10 min. The dough should feel soft but not sticky.

  4. 4

Cover the bowl and leave the dough in a warm spot until doubled in size, 50-60 min.

  5. 5

For the filling, stir the oil, 2 tbsp flour, sesame oil, pepper and remaining 1/2 tsp salt into a loose paste. Mix in the scallions.

  6. 6

Punch down the dough and roll it into a rectangle about 30 x 40 cm (12 x 16 in) and 3 mm (1/8 in) thick.

  7. 7

Spread the filling evenly over the dough, leaving a 1 cm (1/2 in) border along one long edge.

  8. 8

Roll the dough up tightly from the opposite long edge into a log, then pinch the seam shut.

  9. 9

Cut the log into 10 pieces, each about 4 cm (1 1/2 in) wide.

  10. 10

Stretch one piece to about 15 cm (6 in), fold it in half, twist the two strands around each other and pinch the open ends together. Tuck the pinched ends underneath so the spiral layers face up. Repeat with the rest.

  11. 11

Set the rolls on squares of parchment paper in a steamer, spaced 3 cm (1 in) apart. Cover and leave for 20 min, until visibly puffy.

  12. 12

Bring water to a boil in a wok or pot under the steamer. Steam the rolls over medium-high heat for 15 min.

  13. 13

Switch off the burner and let the rolls sit covered for 2 min before lifting the lid, so they do not collapse. Serve warm.
