Restated from the original video
- 1
Toss the chicken with 1 tbsp light soy sauce, the Shaoxing wine and 1 tsp of the cornstarch. Leave for 10 min.
- 2
Whisk the oyster sauce, the second tablespoon of light soy sauce, the sugar, the stock and the remaining cornstarch in a small bowl.
- 3
Heat a wok or large frying pan over high heat until it smokes lightly. Add 1 tbsp oil.
- 4
Stir-fry the beans for 4-5 min, until blistered in spots and tender-crisp. Tip them onto a plate.
- 5
Return the pan to high heat with the remaining oil. Spread in the chicken and leave it for 1 min before stirring.
- 6
Stir-fry the chicken for 3-4 min, until cooked through with no pink inside.
- 7
Add the garlic and ginger and stir for 20-30 seconds, until fragrant.
- 8
Return the beans to the pan and pour in the sauce after a quick stir.
- 9
Cook for 1-2 min, stirring, until the sauce turns glossy and clings to everything. Serve with steamed rice.
