8 ingredients
11 steps
What you need
- 500 g (4 cups) all-purpose flour, plus extra for dusting
- 300 ml (1 1/4 cups) whole milk, lukewarm, about 35 °C (95 °F)
- 2 tsp active dry yeast
- 1 tsp sugar
- 1 large egg
- 1 1/2 tsp salt, plus 1 tbsp for the cooking water
- 150 g (5 oz) day-old white bread rolls, cut into 1 cm (1/2 in) cubes
- 20 g (1 1/2 tbsp) butter
Method
Restated from the original video
- 1
Whisk the yeast and sugar into the lukewarm milk. Leave it for 10 min, until foamy.
- 2
Melt the butter in a pan over medium heat. Add the bread cubes and toss for 3-4 min, until golden and dry. Let them cool.
- 3
Mix the flour and 1 1/2 tsp salt in a large bowl. Add the yeast milk and egg.
- 4
Knead by hand or with a dough hook for 8-10 min, until the dough is smooth, soft and slightly sticky.
- 5
Knead in the cooled bread cubes. Cover the bowl and leave it in a warm place until doubled, 45-60 min.
- 6
Turn the dough onto a floured surface and divide it in two. Shape each half into a loaf about 20 cm (8 in) long and 6 cm (2 1/2 in) thick.
- 7
Cover the loaves and rest them for 15 min.
- 8
Meanwhile, bring a wide pot of water to a gentle simmer and stir in 1 tbsp salt.
- 9
Lower both loaves into the pot. Cover with the lid slightly ajar and simmer gently for 10 min, then turn them over and simmer 10 min more.
- 10
Lift the loaves out with a slotted spoon. Prick each one all over with a fork right away so the steam escapes and the dumplings stay fluffy.
- 11
Slice with kitchen thread or a sharp knife into 2 cm (3/4 in) slices. Serve hot, as a side for dishes with plenty of sauce.
