11 ingredients

14 steps

What you need

  • 400 g (3 1/4 cups) all-purpose flour, plus extra for rolling
  • 1 egg
  • 150 ml (2/3 cup) water, lukewarm
  • 1 tbsp sunflower oil, for the dough
  • 1 tsp salt, plus more for the filling and cooking water
  • 800 g (1 3/4 lb) floury potatoes, peeled and cut into chunks
  • 2 medium onions, finely chopped
  • 3 tbsp sunflower oil, for frying the onions
  • 60 g (4 tbsp) butter, divided
  • black pepper, to taste
  • 200 g (3/4 cup) sour cream, for serving

Method

Restated from the original video

  1. 1

Beat the egg in a large bowl with the water, the sunflower oil for the dough and 1 tsp salt.

  2. 2

Add the flour a handful at a time, stirring, until the mix gets too stiff to stir. Turn it out and knead into a smooth, firm dough that no longer sticks, 6-8 min.

  3. 3

Cover the dough with an upturned bowl and let it relax for 30 min.

  4. 4

Meanwhile, put the potatoes in a pot, cover with water, salt it and simmer until a knife slides in easily, 15-20 min.

  5. 5

Fry the onions in the oil over medium heat, stirring often, until soft and golden, 10-12 min.

  6. 6

Drain the potatoes and mash them smooth with 20 g of the butter. Stir in half of the fried onions, season well with salt and pepper and let the filling cool.

  7. 7

Cut the dough in half and keep one half covered. Roll the other half into a log about 3 cm thick and slice it into 2 cm pieces.

  8. 8

Dust each piece with flour and roll it into a thin round about 8 cm across.

  9. 9

Put about 1 tbsp of filling in the middle of a round, fold it into a half-moon and pinch the edges firmly shut. Repeat with the rest of the dough and filling, setting the vareniki on a floured tray.

  10. 10

Bring a large pot of water to a boil and salt it.

  11. 11

Cook the vareniki in batches, stirring gently once so they do not stick to the bottom. Once they float, give them 3-4 min more.

  12. 12

Melt the rest of the butter in a wide bowl or pan.

  13. 13

Lift the vareniki out with a slotted spoon, let them drain briefly and toss them in the melted butter with the remaining onions.

  14. 14

Serve hot with the sour cream on the side.

About vareniki

Vareniki are dumplings of soft dough folded around a filling, commonly mashed potato and onion, boiled until they float and served with melted butter or sour cream.

What cooks argue about

The disagreement is over the dough: some add sour cream or egg to make it more pliable and tender, others keep it to just flour, water, and salt for a firmer bite.
