Classic Ploughman's Platter with Cheddar and Pickles
10 ingredients
8 steps
What you need
- 200 g (7 oz) mature cheddar, cut into thick wedges
- 4 slices crusty bread, thick, from a white or granary loaf
- 40 g (1.5 oz) butter, softened
- 6 small pickled onions
- 3 tbsp mango chutney, a sweet brown pickle also works
- 1 crisp apple, cored and sliced into wedges
- 2 stalks celery, cut into short lengths
- 2 small ripe tomatoes, halved
- 4 leaves lettuce, crisp, torn
- 100 g (3.5 oz) cooked ham, thickly sliced, optional
Method
Restated from the original video
- 1
Take the cheddar and butter out of the fridge well ahead of serving, so the cheese loses its chill and the butter spreads easily.
- 2
Cut the cheddar into thick wedges and set it on one side of a large board or two plates.
- 3
Cut the bread into thick slices and set them next to the cheese. A good crust matters here, so use bread from a fresh loaf.
- 4
Put the butter in a small dish with a knife for spreading.
- 5
Spoon the mango chutney into a second small dish and put the pickled onions beside it.
- 6
Lay the lettuce on the board, then add the tomatoes and the celery.
- 7
Fan the apple wedges out and arrange the ham in loose folds if using it.
- 8
Serve at room temperature. Each person butters a slice of bread, tops it with cheddar and a spoonful of pickle, and eats the rest of the board alongside.
