14 steps

What you need

  • 300 g (2 1/2 cups) all-purpose flour, plus extra for rolling
  • 1 1/2 tsp active dry yeast
  • 1/2 tsp sugar
  • 90 ml (1/3 cup) water, lukewarm
  • 120 ml (1/2 cup) milk, 90 ml lukewarm for the dough, the rest for brushing
  • 2 tbsp vegetable oil, for the dough
  • 1 tsp salt, 1/2 tsp for the dough, 1/2 tsp for the filling
  • 1 tbsp olive oil, for the filling
  • 1 large onion, finely chopped
  • 300 g (10 oz) ground beef, or lamb
  • 30 g (1/4 cup) pine nuts
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1 tsp sumac
  • 1/4 tsp black pepper, freshly ground

Method

Restated from the original video

  1. 1

Stir the yeast and sugar into the lukewarm water and 90 ml of the milk. Leave until foamy, 10 min.

  2. 2

Mix the flour and 1/2 tsp of the salt in a large bowl. Add the vegetable oil and the yeast liquid and stir into a rough dough.

  3. 3

Knead on a floured surface until smooth and springy, 8-10 min. Add a spoonful of water if it will not come together.

  4. 4

Put the dough in an oiled bowl, cover and leave somewhere warm until doubled, 1 1/2-2 h.

  5. 5

Toast the pine nuts in a dry frying pan over medium heat until golden, 2-3 min, and tip them out.

  6. 6

Heat the olive oil in the same pan and cook the onion over medium heat until golden, 8-10 min.

  7. 7

Add the beef and cook over high heat, pressing it into small crumbs, until all the liquid has cooked off and the meat is browned and cooked through, 8-10 min.

  8. 8

Stir in the allspice, cinnamon, sumac, pepper, remaining 1/2 tsp salt and the pine nuts. Taste, adjust the salt and leave the filling to cool.

  9. 9

Heat the oven to 230 °C (450 °F) and line two baking trays with parchment.

  10. 10

Punch the dough down and divide it into 16 equal balls. Cover them and rest for 10 min.

  11. 11

Roll each ball on a floured surface into a round about 3 mm thick and 10 cm across.

  12. 12

Put a heaped tablespoon of filling on one half of each round, leaving a margin. Fold the dough over, press the edges together and crimp them with a fork.

  13. 13

Arrange on the trays and brush the tops with milk.

  14. 14

Bake until golden, 10-12 min, turning the trays around halfway. Serve warm.
