- 1 tbsp vegetable oil

- 1 tbsp tomato paste
- 1 medium tomato, grated, skin discarded
- 200 g (1 cup) coarse bulgur

- 1 handful flat-leaf parsley, chopped
Method
Restated from the original video
- 1
Melt the butter with the oil in a wide pot over medium heat. Add the onion and cook, stirring, until soft, 5 min.
- 2
Add the green peppers and cook until they soften, 3-4 min.
- 3
Stir in the tomato paste for 1 min, then add the grated tomato. Cook until the mixture is thick and most of the liquid has evaporated, about 5 min.
- 4
Add the bulgur, salt and red pepper flakes and stir for 1 min until every grain is coated.
- 5
Pour in the hot water and bring to a boil. Cover tightly, turn the heat to its lowest setting and cook until the water is absorbed, 12-15 min.
- 6
Take the pot off the heat, lay a clean towel under the lid and leave it to steam for 15 min.
- 7
Fluff the pilaf with a fork, scatter over the parsley and serve.
