What you need
- 160 g (1 cup) raw cashews, unsalted, at room temperature

- 1 tsp rose water, optional
Method
Restated from the original video
- 1
Grind the cashews in a spice grinder in short pulses of a few seconds into a fine powder. Stop before they turn oily or pasty.
- 2
Sift the powder through a medium sieve and regrind any large bits.
- 3
Grease a tray or cut two sheets of baking paper.
- 4
Put the sugar and water in a heavy non-stick pan over low heat and stir until the sugar has fully dissolved, 2-3 min.
- 5
Add the cashew powder and stir without stopping over low heat.
- 6
Keep cooking until the mixture thickens and gathers into one soft mass that rolls around the pan, 8-10 min.
- 7
Tip the mass onto a plate, add the ghee and rose water and let it cool until you can handle it, about 3 min.
- 8
Knead gently with your fingertips until smooth, about 2 min.
- 9
Place the dough between the sheets of paper and roll it out to 3-5 mm (1/8-1/4 in) thick.
- 10
While it is still warm, score it into diamonds with a sharp knife.
- 11
Leave to cool completely, about 20 min, then separate the pieces.
- 12
Keep them chilled in a sealed box and eat within 4 days.
