13 steps

What you need

  • 2 onions, roughly chopped
  • 15 cashews
  • 1 pinch saffron
  • 2 tbsp warm milk
  • 3 tbsp ghee
  • 1 bay leaf
  • 4 green cardamom pods, lightly crushed
  • 3 whole cloves
  • 2 cm (1 in) cinnamon stick
  • 1 tbsp ginger-garlic paste
  • 1 tsp Kashmiri chili powder
  • 1/4 tsp ground turmeric
  • 200 ml (3/4 cup) tomato puree
  • 1 tsp salt, plus more to taste
  • 3 tbsp plain yogurt, whisked smooth
  • 400 g (14 oz) paneer, cut into 2 cm (3/4 in) cubes
  • 100 ml (scant 1/2 cup) heavy cream
  • 1 tsp sugar
  • 1/2 tsp garam masala
  • 1 tsp kasuri methi (dried fenugreek leaves), crushed between the palms
  • 1/2 tsp kewra water, optional

Method

Restated from the original video

  1. 1

Put the onions and cashews in a small pan with 250 ml (1 cup) of water. Simmer until the onions are soft, 8-10 min.

  2. 2

Let them cool slightly, then blend with the cooking water to a smooth, pale paste.

  3. 3

Stir the saffron into the milk and leave it to steep.

  4. 4

Heat the ghee in a heavy pan over medium heat. Add the bay leaf, cardamom, cloves and cinnamon and stir until fragrant, about 30 seconds.

  5. 5

Add the onion-cashew paste and cook, stirring often, until it thickens and the raw onion smell is gone, 5-6 min. Do not let it brown.

  6. 6

Stir in the ginger-garlic paste and cook for 1 min.

  7. 7

Add the chili powder and turmeric with a splash of water, then the tomato puree and salt.

  8. 8

Cook, stirring now and then, until the gravy thickens and ghee glistens at the edges, 6-8 min.

  9. 9

Lower the heat and stir in the yogurt a spoonful at a time so it does not split.

  10. 10

Add 120 ml (1/2 cup) of water and simmer for 3 min. The gravy should coat a spoon.

  11. 11

Stir in the cream, the saffron milk and the sugar, then slide in the paneer.

  12. 12

Simmer gently, covered, until the paneer is heated through and soft, 3-4 min.

  13. 13

Finish with the garam masala, kasuri methi and kewra, if using. Taste for salt and serve hot with naan or rice.
