18 ingredients

11 steps

What you need

  • 300 g (2 1/3 cups) all-purpose flour, plus extra for rolling
  • 1 tsp instant yeast
  • 1/2 tsp sugar
  • 2 tsp salt, divided
  • 180 ml (3/4 cup) lukewarm water
  • 1 tbsp olive oil
  • 300 g (10 oz) ground lamb, with about 20% fat
  • 1 onion, small
  • 1 tomato, medium
  • 1/2 red bell pepper, or 2 long green peppers
  • 2 cloves garlic
  • 1 bunch flat-leaf parsley, about 30 g (1 oz), half for the topping, half to serve
  • 1 tbsp tomato paste
  • 1 tbsp Turkish hot pepper paste, biber salçası
  • 2 tsp Aleppo pepper, pul biber
  • 1/2 tsp ground cumin
  • 1/2 tsp black pepper
  • 1 lemon, cut into wedges

Method

Restated from the original video

  1. 1

Combine the flour, yeast, sugar and 1 tsp salt. Pour in the water and olive oil and knead until smooth and elastic, 5-8 min.

  2. 2

Cover and leave in a warm place until almost doubled, about 1 hour.

  3. 3

For the topping, chop the onion, tomato, pepper, garlic and half the parsley very finely by hand or in short pulses of a food processor. Press the mix in a sieve to drain off the juice.

  4. 4

Combine the drained vegetables with the lamb, tomato paste, pepper paste, Aleppo pepper, cumin, black pepper and remaining 1 tsp salt. Knead until it forms a soft, spreadable paste.

  5. 5

Put a pizza stone or heavy upturned baking tray in the oven and heat to 250 °C (480 °F) for at least 30 min.

  6. 6

Divide the dough into 6 balls, cover and rest for 10 min.

  7. 7

On a floured surface, roll one ball into a very thin oval or round about 25 cm across.

  8. 8

Spread a sixth of the topping over it in a thin layer, pressing it right into the dough and leaving a 1 cm border.

  9. 9

Slide it onto the hot stone and bake until the edges are crisp and browned and the meat is cooked through, 5-7 min.

  10. 10

Stack the baked lahmacun on a plate under a towel to keep them soft while you bake the rest.

  11. 11

Serve with the remaining parsley and lemon wedges to squeeze over, then roll up to eat.

About lahmacun

Lahmacun is a thin round of dough spread with a paste of minced lamb, tomato, onion, and pepper, then baked hot and fast until the edges turn crisp and the topping stays thin.

What cooks argue about

Cooks argue over how finely the meat topping is minced or blended into a near paste, since a coarser mince gives texture but a smooth paste spreads thinner and crisps more evenly.
