- 2 eggs
- 1 red onion, thinly sliced into half-moons
- 2 tsp sumac, plus extra for serving
- 1 tsp salt
- 60 ml (1/4 cup) extra virgin olive oil
- 2 tbsp grape vinegar, or white wine vinegar
- 2 tbsp lemon juice, about 1/2 lemon

- 2 tomatoes, seeded and diced
- 1 bunch flat-leaf parsley, chopped
Method
Restated from the original video
- 1
Lower the eggs into boiling water and cook for 10 min. Cool them in cold water, peel and cut into quarters.
- 2
Put the onion in a large bowl with the sumac and half the salt.
- 3
Rub the onion between your fingers until it softens and turns pink, about 1 min. Leave it for 10 min to mellow.
- 4
In a small bowl, whisk the olive oil, vinegar, lemon juice, pepper flakes and the remaining salt.
- 5
Add the white beans, tomatoes and parsley to the onion.
- 6
Pour over the dressing and fold gently so the beans stay whole.
- 7
Taste and add more salt or lemon juice if needed.
- 8
Arrange the egg on top, dust with a little more sumac and serve at room temperature.
