11 steps

What you need

  • 1.4 kg (3 lb) corned beef brisket, cured, uncooked
  • 1 tsp black peppercorns
  • 4 whole cloves
  • 2 leaves bay leaves
  • 700 g (1.5 lb) small red potatoes, scrubbed
  • 400 g (14 oz) carrots, peeled, cut into 5 cm pieces
  • 400 g (14 oz) turnips, peeled, cut into 4 cm chunks
  • 3 small yellow onions, peeled and halved
  • 1 small green cabbage, about 900 g, cut into 6 wedges through the core
  • 4 tbsp whole-grain mustard, for serving
  • 3 tbsp prepared horseradish, for serving
  • black pepper, freshly ground, for serving

Method

Restated from the original video

  1. 1

Rinse the brisket under cold running water.

  2. 2

Put it in a large pot, cover with cold water by 2.5 cm (1 in) and bring to a boil. Boil for 10 min, then drain and discard the water to take off the harshest of the cure.

  3. 3

Return the beef to the pot with fresh cold water to cover by 2.5 cm (1 in). Drop in the peppercorns, cloves and bay leaves.

  4. 4

Bring to a bare simmer, partly cover and cook on low heat until a fork slides into the thickest part with little resistance, 2 1/2-3 hr. Skim off foam now and then.

  5. 5

While the beef cooks, scrub and prepare the potatoes, carrots, turnips, onions and cabbage.

  6. 6

Lift the beef onto a board and tent it loosely with foil. Rest for 20 min and keep the cooking liquid hot.

  7. 7

Bring the liquid to a steady simmer. Add the potatoes, carrots, turnips and onions, cover and cook for 15 min.

  8. 8

Tuck in the cabbage wedges, pushing them under the liquid. Cover and simmer until the cabbage and every other vegetable is tender but not falling apart, 10-12 min.

  9. 9

Slice the beef across the grain into slices about 6 mm (1/4 in) thick.

  10. 10

Lift the vegetables onto a large platter with a slotted spoon. Slip the beef slices into the hot liquid for 1-2 min to rewarm, then arrange them in the middle of the platter.

  11. 11

Serve with the mustard, horseradish and black pepper, and a ladle of the cooking liquid in each bowl.
