Southern Cornmeal Hush Puppies with Onion

11 ingredients

10 steps

What you need

  • 210 g (1 1/2 cups) yellow cornmeal, fine or medium grind
  • 65 g (1/2 cup) all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper, freshly ground
  • 1/4 tsp cayenne pepper
  • 1 large egg
  • 180 ml (3/4 cup) buttermilk
  • 1 small onion, finely chopped
  • 1.5 l (6 cups) vegetable oil, for deep frying

Method

Restated from the original video

  1. 1

Pour the oil into a heavy, deep pot to a depth of about 7 cm (3 in) and heat it to 180 °C (350 °F).

  2. 2

In a large bowl, whisk the cornmeal and flour with the sugar, salt, baking powder, black pepper and cayenne.

  3. 3

In a second bowl, beat the egg into the buttermilk.

  4. 4

Pour the wet mixture into the dry one and fold with a spatula just until no dry streaks remain.

  5. 5

Fold in the onion. The batter should be thick enough to hold its shape on a spoon.

  6. 6

Drop rounded tablespoons of batter into the hot oil, 6-8 at a time so the pot is not crowded.

  7. 7

Fry, turning a few times, until deep golden on all sides and cooked through, 3-4 min. Break one open to check the center is not doughy.

  8. 8

Lift them out with a slotted spoon and drain on paper towels.

  9. 9

Let the oil come back to 180 °C (350 °F) before frying the next batch.

  10. 10

    Serve hot.
