7 ingredients
7 steps
What you need
- 300 g (10 oz) sharp cheddar, from a block
- 60 g (2 oz) cream cheese, softened
- 80 ml (1/3 cup) mayonnaise
- 80 g (3 oz) jarred pimentos, diced
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper, freshly ground
- salt, to taste
Method
Restated from the original video
- 1
Grate the cheddar on the coarse holes of a box grater. Pre-shredded cheese carries anti-caking powder and turns the spread dry.
- 2
Drain the pimentos in a sieve, press out the liquid and blot them dry with paper towels.
- 3
Beat the softened cream cheese in a large bowl until creamy, then beat in the mayonnaise, cayenne pepper and black pepper.
- 4
Add the cheddar and pimentos. Stir until evenly mixed but still chunky.
- 5
Taste and add salt only if needed, since the cheddar is already salty.
- 6
Cover and chill for at least 30 min so the flavors blend.
- 7
Serve cold as a spread or dip. Keeps up to 5 days in the fridge.
